  • 2 cups fresh blueberries
  • 2 1/4 cups all-purpose flour
  • 2/3 cup granulated sugar
  • 2 1/2 teaspoons baking powder
  • 1/3 cup Crisco shortening
  • 2 tablespoons Crisco shortening
  • 3/4 cup milk
  • 1 large egg
  • 1/4 cup chopped walnuts
  • 1/4 cup light brown sugar
  • 1/2 teaspoon ground allspice


  1. Preheat oven to 375 degrees and grease a 9" round cake pan. Mix 1 c. blueberries with ? c. flour and set aside. Stir together 1 ? c. flour, granulated sugar and baking powder.
  2. Add together and beat until smooth: 1/3 c. shortening, milk and egg. Combine dry and creamed mixtures and add floured berries. Pour into 9” round greased cake pan. Sprinkle with remaining 1 c. berries.
  3. Mix remaining ? c. flour, 2 tblsp. shortening, chopped nuts, brown sugar and allspice. Mix until crumbly. Sprinkle mix over berries.
  4. Bake at 375 degrees for 45-50 min; or until cake tester comes out clean. Makes approximately 8-10 servings. Freezes well.
  5. This is a colorful and festive coffeecake that will draw raves from your guests (and many requests for the recipe)! If you wish, substitute other fresh fruit such as whole cranberries, or mix with blueberries.
