Marquise of Dark Chocolate

  • 8 oz Semi-Sweet Chocolate
  • 8 oz Unsalted Butter
  • 1/2 cup Milk
  • 3 Eggs
  • 1/4 cup Sugar


  1. Break chocolate into small pieces and melt gently in a double boiler. Put aside in medium mixing bowl.
  2. Bring milk and sugar to a boil in a medium saucepan. Pour mixture over chocolate.
  3. Break eggs and separate the yolks and whites. Beat whites to a stiff peak.
  4. Add yolks, one at a time, into the chocolate mixture. Add melted butter. Stir to combine, then fold in egg whites.
  5. Pour marquise into molds and refrigerate 4-5 hours.
