  • 6 eggs
  • 1 cup all purpose flour
  • 1 cup milk
  • 1/2 cup sugar
  • 1/4 cup frozen orange juice concentrate
  • 1 tablespoon butter or margarine
  • 4 tablespoons butter or margarine
  • lemon wedges, powdered sugar for garnish


  1. Combine eggs,flour,milk, sugar and orange juice concentrate in processor or blender and mix well. Add 1 tablespoon butter and blend in thoroughly.
  2. Preheat oven to 450 degrees F. Add 1 tablespoon butter to each of four 1-cup oval baking dishes. Can also use cooking spray to cut down on calories. Heat dishes in oven until better/margarine melts being careful not to let butter brown. Divide batter evenly among four dishes.
  3. Bake until puffed and golden approximately 20 minutes.Time may vary depending on your oven. Serve immediately with powdered sugar and or fresh berries and lemon wedges.
