Banana Stuffed French Toast

  • Challah bread, cut 1-1/2" thick
  • bananas, sliced
  • eggs, large
  • whole milk
  • cinnamon
  • vanilla
  • sugar
  • cinnamon
  • Maple syrup


  1. Combine 1/2 tsp of cinnamon with the sugar and set aside.
  2. From the bottom side of the bread, use a serrated or steak knife to cut a pocket in the bread, leaving the top and sides intact. Stuff each piece of bread with approximately 1/2 banana.
  3. Spray a nonstick griddle or pan with nonstick spray and heat. Cook French toast over medium heat 3-4 minutes per side, or until golden brown.
  4. Remove from heat and transfer to a separate plate. Roll each slice in cinnamon sugar. Serve with warmed maple syrup.
  5. Whisk milk and eggs together. Add vanilla and remaining cinnamon. Dip each slice of bread several times into the mixture to coat fully.
