If caramel mixture begins to harden, add a little water and swirl. Immediately remove from heat and cover with foil until waffles are finished. No matter what waffle recipe you are using, beat the egg whites to soft peaks before added to the waffle batter. This makes for lighter waffles. To plate, put two quarters of banana on the plate first, then the hot waffle - this keeps the bottom sides from becoming soggy. Top the waffles by dividing remaining topping evenly. Add whip cream if desired.
