  • 14 oz can drained Canned Artichoke Hearts
  • small jar drained Marinated Artichoke Hearts
  • 1/2 cup Mayonaise
  • 4 oz drained chopped green chilies
  • 1/4 cup diced pimento or roasted red pepper
  • 1/2 cup shredded monterey jack cheese
  • 1/2 cup grated parmesan cheese


  1. Reserve Pimento. Mix all ingredients in food processor until blended. Stir in pimento. Put into small 1 1/2 quart baking dish.Sprinkle with additional parmesan cheese. If making ahead,. cover and refrigerate now.
  2. Bake uncovered 350 for 30 minutes. Serves 20 Can put into smaller dishes for fewer guests.
