Mix together flour, sugar, cocoa powder and salt in a deep bowl. Beat eggs, milk, and vanilla in a separate bowl; mix in the melted butter. Pour the wet ingredients into the dry, and stir just until combined. Do not over mix.
Heat a lightly oiled griddle or skillet over medium-high heat. For each pancake, pour 1/4 cup batter on griddle and cook until bubbles appear, about 2 minutes. Flip, and cook an additional minute on the opposite side.
Plate one pancake and lightly spread 1 teaspoon of jam over the pancake. Top with another pancake, repeat and place the third pancake on top the pile and top with one teaspoon jam in the middle of the top pancake, do not spread. Melt chocolate in a double boiler. Top the pancakes with fresh strawberries and drizzle with melted chocolate. Makes 6 medium pancakes and serves 2.
