Smoked Salmon Quiche

  • 1 unbaked pie crust (either homemade or store purchased)
  • 1 cup brocolli crowns (if using frozen thaw first) Cut into small pieces
  • 1 cup sweet onion - chopped
  • 2 cup Flaked smoked salmon - deboned
  • 8 oz Swiss cheese grated
  • 6 eggs
  • 1 cup Heavy whipping cream
  • 1 1/2 tablespoons Dried dill
  • 1/2 teaspoon Black pepper


  1. Preheat oven to 350 degrees.
  2. Place unbaked pie crust into pie pan. Cover bottom of pie crust with brocolli. (if frozen thaw first) Layer onion, salmon and swiss cheese over brocolli. Beat eggs in separate bowl and stir in whipping cream, dill and pepper. Pour egg mixture over layers SLOWLY.
  3. Bake for one hour, or until center tests done. (If you don't like a dark outer crust, cover edges of pie crust with foil for first 30 minutes and then remove for rest of baking time.) Allow to cool for 15 minutes. Cut into six slices and serve.
  4. NOTE: This can be completely prepared the day before and refrigerated overnight. Cut into slices and heat each slice individually in the microwave for 1-1 1/2 minutes.
