Absurdly large (and intoxicatingly good) breakfast popovers

  • eggs
  • melted butter
  • salt
  • milk
  • flour


  1. Whisk in melted butter and milk.
  2. Add 2 cups flour and beat until almost smooth.
  3. Spray 6 custard cups with non-stick spray then fill with batter. Cups should be almost full - about 1/4 to 1/2 inch from the top.
  4. Bake in a preheated 400 degree oven for 50 - 55 minutes. Do not peek until the 50 minutes are up! You may be tempted to check them because they smell so delicious but wait or they may deflate.
  5. The name comes from a USA Today article by Laura Bly. She spent the night then had our popovers the next morning. She called them "absurdly large (and intoxicatingly good) breakfast popovers."
  6. Beat eggs until foamy.
