1 French baguette sliced on the diagonal 3/4-inch slices
1 cup Heavy cream
1 cup Powdered sugar - half for batter - half for cream
1 teaspoon Vanilla
1 pinch Salt
2 pints Mixed berries of your choice
1 cup Cream cheese
1/2 cup Mascarpone cheese
1 cup Sugar for brulee
Mix sweet cream by softening cream cheese before mixing with mascarpone and powdered sugar to taste. (Hold back a small amount of powdered sugar for finishing.) Place creme mixture in piping bag with a star tip (for decorative effect). Set aside.
Mix heavy cream, eggs, 1/2c. powdered sugar, and vanilla to create batter. Soak bread slices till batter is absorbed into each slice. Using a non stick pan, saute' slices on both sides in butter till golden. Then place in 350 degree oven for 3-4 minutes.
Remove toast from oven & blot on a clean toweling. Using a spoon, dust the tops of the toast with a good layer of brulee sugar and immediately torch the sugar with a kitchen torch (or under broiler using a watchful eye) until browned.
Place brulee'd toast on plate. Then pipe the sweet cream onto the plate in several places, applying your own artistic design style. Dust the entire dish with powdered sugar & freckle with a handful of whatever fresh seasonal berries you have in your area. Serve with real Maple syrup!
