Ingredienti

  • 3 lb Crab Claw Meat (well picked for shells)
  • 1 Roasted Red Pepper (diced and drained)
  • 1 Rib Celery (finely diced)
  • 1/4 cup Yellow Onion (finely diced)
  • 1 cup Sour Cream
  • 1/4 cup Lemon Juice (fresh squeezed)
  • 1/2 tablespoon Ginger (dried)
  • 1 teaspoon Mustard (dried)
  • 1/2 teaspoon Salt
  • 2 Eggs
  • 1/4 cup Cilantro (chopped)
  • 1 cup Fresh Ripe Peaches (chopped)
  • 4 cups Panko Bread Crumbs

  1. Saute Onion and Celery till soft.
  2. Mix all ingredients together except Bread Crumbs. Try not to break up Crab so as to have some larger pieces in cakes. Mix in Bread Crumbs.
  3. Form desired size cakes.
  4. Cook in nonstick pan with Butter for 3 - 4 minutes on each side.
