  • 25-30 Mangoes (almost ripe)
  • 1 cup Vinegar (white)
  • 2 1/4 cup Sugar
  • 4 tablespoons Hawaiian Rock Salt
  • 4 oz Li Hing Mui
  • 1 Gallon Bottle


  1. Peel and cut mangoes into 1/8" if seed is soft enough to cut through. Otherwise, slice off the meat into bite size pieces.
  2. Fill the one gallon container with sliced mangoes and add above ingredients.
  3. Shake to mix it up and let it stand for an hour or two.
  4. Chill (optional)
